Ranjaka

Red chili paste in a lemon and spices base. Ranjaka is a famous spicy condiment from North Karnataka. It is essentially a fiery red chili chutney/pickle made primarily from fresh red chilies, salt, and souring agents such as lemon juice, often flavored with fenugreek, and asafoetida. Very spicy and intensely flavored. Stored like a pickle and can last for months when refrigerated. Because it is extremely spicy, a little goes a long way.
